Ingredients:

  • 2 pounds boneless, skinless chicken breasts, cut lengthwise into 1/2-inch strips
  • 1/4 cup fresh lime juice (from 2 limes)
  • 1/4 cup olive oil, divided
  • 2 teaspoons chili powder
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon fine sea salt, plus more to taste
  • 3 bell peppers (mix of red, yellow and green), cut into 1/4-inch strips
  • 1 medium onion, halved and thinly sliced
  • 8-12 (6-inch) flour tortillas
  • Optional toppings: shredded cheese, guacamole, salsa, sour cream, lettuce

Instructions:

  1. In a large bowl, whisk together the lime juice, 2 tablespoons olive oil, chili powder, onion powder, garlic powder, black pepper, cumin, paprika and 1 teaspoon salt. Add the chicken and turn to coat evenly. Let marinate at room temperature while you prepare the veggies.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the chicken in a single layer and cook for 3-5 minutes per side, until browned and cooked through to an internal temperature of 165°F. Transfer to a cutting board to rest.
  3. Add the remaining 1 tablespoon olive oil to the skillet. Add the bell peppers, onion and a pinch of salt. Cook, stirring frequently, for 5-6 minutes until vegetables are tender and starting to brown. Recipe by Ineskohl.info
  4. Slice the chicken into thin strips. Return the chicken to the skillet and stir to combine with the vegetables. Remove from heat.
